Found a Pimento Cheese recipe another reader requested in Real South Cooking by Patricia B Mitchell. 6 oz sharp cheddar cheese, grated, 3 tbs. diced, drained pimientos, salt to taste, pinch of cayenne pepper or dash of Tabasco.
